From Lee at Quietly:
Ndima-ini embodies all the sweet, juicy and clean flavours that make Kenyan coffees just so ceaselessly wonderful. I sourced two separate bean sizes from the same washing station this harvest (more below) and this AA would be the sticky-sweet counterpoint to the PB’s bright acidity and cooked fruit notes. The cup opens with a sun-warmed red plum and candy-like cherry acidity. It is big and extraordinary well-articulated. The cup is buttery sweet with a nice muscovado or brown sugar note, which reminds me of a nice soft sugar cookie.
For this year’s main harvest in Kenya, I worked with Red Fox Merchants to bring in both ‘AA’ and ‘PB’ lots from Ndima-Ini factory or wash station. The letters refer to the size of the bean. At origin, metal sheets with rows of evenly stamped holes separate different sizes of cherries; think of a kid’s brightly coloured shape sorter or a as-seen-on-TV solution to organizing coins. This is the ‘AA’ or largest sized bean.
While traditionally 'AA's are cited above 'AB' and 'C', it is hard to imagine anything bad comes from Ndima-ini, whose fertile volcanic soil and freshwater streams produce some of the best coffee in the entire Nyeri region. The station sits just north of the town of Karatina and collects beans from 1143 farmers in the area. They employ a 72-hour washing process with a total of three wash cycles following de-pulping. The Ndima-ini factory is one half of the Gakuyu Cooperative Society, which split from the much larger Mathera Cooperative Society in 1996.
