Notes from Prodigal
"Naturally processed coffees typically feature softer, lower acid profiles, but this Buena Vista Pink Bourbon is a lovely example of a crisp, bright natural with punchy red fruit flavors. We first featured coffee from this farm nearly two years ago!
Husband & wife team Edgar Motta and Susan Mences are the proud managers of Buena Vista, a 13 hectare oasis with beautiful views. Inheriting the farm from their parents, Edgar and Susan started with Caturra and Castillo varieties. After expanding into specialty coffee and tasting a beautiful Pink Bourbon, they were hooked and invested in their own trees. Buena Vista is determined to improve their coffee with each harvest, in addition to bringing more natural diversity to their land.
The harvesting of the fruit in this lot was a highly selective process, with only ripe coffee cherries being picked and floated for density. The coffee was dried in thin layers on well ventilated drying beds, while being turned six times a day for 20-24 days."
